| 2 eggs
¼ cup milk
1 cup sugar salt
1 ½ cups all-purpose flour
2 pounds fresh fruit (apples, peaches, pears, berries ... whatever you have on hand!) |
1. Preheat the oven to 375°F.
2. Beat the eggs and milk in a bowl. Add the sugar and a pinch of salt and continue to beat. Add the flour mixing it in thoroughly to produce a compact cake batter.
3. Peel, slice and de-seed the fruit of choice. Add fruit into the bowl and mix (the batter will mostly be fruit).
4. Smear a 9-inch pan with butter and add batter. Place pan in upper third of the oven and bake for 50 minutes or until the top has become lightly colored.
